In recent years, kale has been hailed as one of the absolute best superfoods – and it’s not hard to see why.
Although it belongs to the same family as other greens like cabbage and Brussels sprouts, kale ranks significantly higher on the Aggregate Nutrient Density Index.
Some nutrients found in kale include:
- Vitamin A: A single cup of kale contains 200 percent of our daily recommended value. Vitamin A promotes healthy eyes and reduces your chances of cataracts.

- Kale is a great alternative to spinach. It can be used in place of spinach in most recipes and actually contains more iron.
When choosing kale, smaller leaves tend to be less bitter than larger leaves. To store it, trim the stems and keep them in water, as you would with flowers. You can even dip limp kale in ice water to bring it back to life. When cooking, sauté your kale instead of boiling it, as the latter strips it of many of its nutrients.
